Ok, I haven't been doing my best with blogging lately. Our good friends, the Hagen's were in town for almost a week, and I just didn't bother with blogging. Then this past weekend my mom, sibs, aunt and cousins went on a road trip to Louisiana for my mom's cousin's wedding. I didn't want to waste my 3G network on my iPhone, so once again, I didn't bother with blogging. So, this week's addiction is being posted on a Wednesday.
As of late, I have been hooked on cooking. Like the other weekend. I was in the mood to bake... so what did I do? I went to the store, bought stuff to make a cheesecake, came back home, and made a cheesecake.
I just really enjoy being in the kitchen. Now, I'm not the best. There have been plenty of ups and downs. Like last weekend, when the Hagen's were here, I made another cheesecake. Well, something happened and we had to throw it away. So sad! But dispite the heartaches, I really enjoy it.

Floss
How many times as kid did you hear your parents tell you to floss your teeth? I heard it quite often, but never really obeyed. When my two front teeth broke a age 12, I was obsessed with taking care of my teeth. Then at age 16 when I got my braces, same thing, obsessed with taking care of my teeth. Since braces free, I have not flossed.
Well, with cleaning things out because of moving, I found tons of floss from various ortho and dentist appointments. So, I've been flossing again... But not only that, I look forward to flossing before bed. My teeth feel squeak clean, and I love it!... My addiction

Strawberry Mango Smoothie
Thursday, I made Strawberry Mango Smoothie from my smoothie book.
Combine:
- 2 cups fresh or frozen strawberries (I used fresh)
- 1 cup fresh or frozen mango slices (I used frozen)
- 3/4 cup apricot juice
- 1 to 3 ice cubes
*I could not find apricot juice, so I used pineapple instead.
Once everything is smooth, add 3 ice cubes if using fresh fruit and 1 to 2 ice cubes if using frozen fruit. Then process until smooth. Serve immediately.

Kiwi Strawberry Smoothie
From my new smoothie cookbook, I made the Kiwi Strawberry Smoothie.
In your smoothie maker or blender, add:
- 2 kiwi, peeled and sliced
- 1 cup frozen unsweetened strawberries
- 1 container (6oz) low-fat strawberry yogert
- 1/2 cup low-fat milk
- 2 Tbs honey
*I did not have enough frozen strawberries, so I used fresh. Which worked just as good.
*We did not have strawberry yogert, so I used vanilla. That too worked just as well.
This was very tart, but very good. D and Lil, loved it!

Garlicky Baked Chicken Breasts
For this past Tuesday's meal, I made Chicago Bears' Tight End, Desmond Clark's Garlicky Baked Chicken Breasts.
You need:
- 2 whole boneless chicken breasts, with skin
- 4 garlic cloves, minced
- 3 Tbs olive oil
- 3/4 tsp garlic salt, or to taste
- 3/4 tsp seasoned salt, or to taste
- 1 onion, finely chopped
- 1 cup low-sodium chicken broth
- 2 Tbs chopped fresh parsley
*I bought skinless chicken, cuz that's what was on sale, and it worked just fine.
*I also did 5 more chicken breasts rather than 2.
Carefully loosen the skin of the chicken breasts with your fingers. Put the garlic under the skin and work it in, massage with your hands to fully incorporate the garlic. Set aside for 20 minutes at room temperature or cover and refrigerate overnight.
Preheat the over to 350 degrees. Then brush the chicken wiht oil and sprinkle with both salts. Place the chicken skin side up in a baking dish large enough to fit the chicken comfortably. Sprinkle the onion around the chicken and add the broth. Bake, basting occasionally, untill golden brown and cooked through, about 45 minutes.
Reheat juices in a sause pan over high heat.
Place the chicken over rice, and then sprinkle with parsley.
Along with the rice, I had broccoli and fresh fernch bread. And not only did the big people like it, the kiddies also enjoyed it!

Lemon Cheesecake
Last Saturday, April 09, I was in the mood to cook something. So what did I do? I went to the store, and bought things to make Lemon Cheesecake. My mom and big sister, Becca, send me emails with recipies. Which I love receiving! And this was one that my mom had sent me.
It calls for:
- 2 packages (8oz each) cream cheese, softened
- 3/4 cup sugar
- 3 containers (3.5 oz each) lemon pudding
- 1/2 cup sour cream
- 3 eggs
- 2 cups frozen whipped topping
*for the whipped topping, I just bought a can of whipped cream rather than the frozen kind.
*It also gives the ingredients to make the crust, but I took the easy route and bought a box.
First, make the pudding according to the directions on the box. Once that is done, mix together the cream cheese, sugar, pudding and sour cream on medium speed until smooth and creamy. Beat in eggs, one at a time, until mixed. Pour over crust. Bake 1 hour 20 minutes to 1 hour 35 minutes or until edges are set but center of cheesecake jiggles slightley when moved. Turn oven off, open oven door at least 4 inches. Leave cheesecake in oven 30 minutes longer.
Remove cheesecake from oven; place on cooling rack. Without releasing side of pan, run knife around edge of pan to loosen cheesecake. Cool in pan on cooling rake 30 minutes. Cover loosely; refrigerate 4 hours or overnight. Remove side of pan before serving.

Americano = Yum
For this Tuesday's addiction it is Starbucks' Caffe Americano. I have had it twice in the last week, and love it! Unlike other Starbucks, this one is afordable. It does not have any kind of sweetener in it, it's just espresso. I like to put a little half and half in it, but that's it. And again, unlike other Starbucks drinks, it does not have that oily or smoky flavor like other brews have (as my dad would put it). So for those of you who are like him, you might like this. Give it a try! And I'd love to know what you think, if you agree or disagree. So if you want, feel free to leave a comment.

Team Heat!
Today was an exciting day. My team, the Miami Heat went up against the Boston Celtics for the forth time this season. Each time a heartach, except today! It was a tense game for sure. I'm not quite sure what it is, but the Celtics have a way of getting into other team's skin. And today's game was just like any other game vs. the Celtics... they were getting into the Heat's skin.
Midway through the second, as James was going up for a layup, O'Neal (not Shaq, but Jermaine O'Neal) threw his sholder into James. James being the player he is, in return threw the ball and hit O'Neal's back. Some people might not like this type of play, but this is how I see it. It was clear O'Neal was trying to hurt James in some way, and anytime James sinces himself or a teammate in danger, he reacts. I saw him do this during a game a few months ago. Someone was trying to injure Wade, and James reacted. He's not a hot head. He's just protecting his "family".
Well, refs called a T on James, and a flagrant on O'Neal. During this comotion, Pierce pushed Wade aside, and Wade pushed back. Causing a double T.
Just over 2 minutes later, the ball was lose and Wade went after it. Rondo then pushed Wade back and dived after the ball. Rondo not really having the ball even after the dive, Bosh then went down to grab it. Refs called it Celtics ball (which it was clearly a jump ball). At Bosh's surprise, he got really mad, getting himself a T as well. Like I said, it was a tense game... and this was still all in the first half.
Second half came around and it wasn't as bad as the first, but it was still pretty heated. I was holding my breath for most of it. And my dad was getting a little irritated.
At the end Heat sealed it with a 23 point lead, 100-77. The clock was still going when Celtics left for their locker room.... Can we say sweet victory?
But I am still amazed that my favorite player in the NBA, Lebron James, would have ever gone to the Miami Heat! My team since 2002! I can remember how I found out. I almost passed out... really! What a day to remember!

Not So Little, Four Letter Word
When the word hell is brought up, people try to change the subject. Actually, most people in the world don't believe in hell at all. Even Christians. They think everyone is going to heaven! But I have a question. If everyone is going to heaven, why did Jesus die? Why would God send his only son, if we are all going to heaven. He didn't have to die, He could have just stayed up in heaven. Or... God could have still sent Him, and he could have shown us how to live our lives... He didn't have to die.
This is what I have to say about this.... This is not truth! Pray that God would help you see this. Christ lived a sinless life, died on the cross in our stead, taking all of God's wrath that we were supposed to have, and raised to life on the thrid day! He took our place! He saved us from damnation!
I've been thinking about this alot lately, and then as I was reading Pierced by the Word when I was out of town, I read the chapter called "Dorthy Sayers On Why Hell is a Nonnegotiable". It was one of those things, that you know it was God showing you. An E.G.G.!
John Piper says, "We need to prize truth above temporary successes. Where truth is minimized and people are not rooted and grounded in it, successes are superficial and the growing tree is hollow even while it blooms in the sunshine of prosperity. May God give us a humble, submissive love for the truth of God's Word in the depth and fullness of it.
Listen to Paul's warning about our day: "The time is coming when people will not endure sound teaching; but having itching ears they will accumulate for themselves teachers to suit their own passions (2 Timonthy 4:3). "They are perishing, because they refused to love the truth and so be saved" (2 Thessalonians 2:10)."
"They refused to love the truth." How can you say hell is not real when it is in the Bible? If you say that, then you are going aginst what God has said. Going aginst His Word! John Piper has a quote from Dorothy Sayers, and at the end of it she says, "We cannot repudiate Hell without altogether repudiating Christ."
The definition for repudiate is "1. Refuse to accept or be associated with. 2. Deny the truth".
Wow! So when you refuse to accept or deny the truth of hell, you are also refusing to accept or denying the truth of Christ, and what He did on the cross!!! You are "refusing to love the truth"!
It is only by God's amazing grace that we are able to see this! I pray I never stop believing this wonderful truth! And that I can "prize truth above temporary successes".

Berry Berry Mango Smoothie
When I went to the store to get things for dinner Tuesday night, I found a smoothie book. I have a smoothie maker, and the little book I have for smoothies, most of the recipes I can't use till I'm 21 (October!!!!). So, I was pretty excited to find this for less than $5! I made the first one after dinner Tuesday for dessert; Berry Berry Mango Smoothie.
This is what is in it:
- 1 medium mango, cubed (about 1 cup)
- 1 cup frozen strawberries
- 1/2 cup frozen raspberries
- 1/2 cup low-fat vanilla yogert
- 1/2 cup milk
- 2 Tbs honey
*I could not find a fresh mango, so I used frozen mangos.
Just throw everything in, and serve. But serve immediately, or the milk will start to separate (not sure why, but it does).

Tomato and Onion Braised Chicken
Tuesday night I made New Orleans Saints' (now Philadelphia Eagles) Defensive End, Bobby McCray's recipe, Tomato and Onion Braised Chicken. He says prep time is 1 hour, but it's a pretty easy meal. I really enjoyed making it.
It calls for;
- 8 boneless, skinless chicken thighs
- Salt and black pepper
- 1 Tbs extra-virgin olive oil
- 1 large onion, sliced
- 4 garlic cloves, minced
- 1/2 tsp red pepper flakes
- 1/2 cup white wine (I used cooking wine)
- 1/2 cup low-sodium chicken broth
- One 28oz can whole tomatoes, crushed with your hand
- 1 Tbs chopped fresh oregano
- 1 Tbs chopped fresh thyme
*I did bone-in chicken instead, and we thought it made it a little more juicy. So rather you like your chicken dry or juicy it's up to you!
In a deep saute pan, heat the oil on high heat. Sprinkle salk and peper on the chicken, then place in the oil. Cook until chicken is browned, for about 8 to 10 minutes. Remove from oil, and place on a plate. Set aside.
With oil on medium-high heat, add onions, and cook untill softened, about 4 minutes. Then add garlic and red pepper flakes, stirring frequently, until onion is lightly browned and the garlic is soft, about 5 minutes. Add wine, stirring to scrape up any browned bits in the bottom of pan, and simmer until reduced by half, about 5 minutes. Add broth, tomatoes, oregano, thyme, and chicken. Bring to boil, then lower heat and simmer for 30-40 minutes, until chicken is tender and the sauce has thickened slightly.
*When it was time to simmer I went ahead and cooked the rice. I also cooked sauteed green beans.
Like I said, it does take some time, but it's very easy! It's really just a matter of waiting for things to cook.

"I MADE THIS FOR YOU!"
Ok, at the moment, one of my addictions is Julian Smith TV. What is this you might ask? You might know him as the Jelly-fish guy. If not, he's a YouTube star that I am very addicted to! I can... scratch that... I do watch his stuff over... and over... and over... and over... and over again. I would tell you what one is my favorite, but I can't pick one. He's just that amazing. As of right now it is 12:50 am, and I have been watching his videos for well over an hour, and I am just now realizing the time, and that I have a pile of laundry on my bed, and I have work in the morning. Oh, boy!
How I heard of him is a funny story. This past summer, when we were in Jacksonville, we showed my cousins his Jelly-fish video. And very out of the norm for us, never looking into any more of his stuff. Well, when we went back to Jax this past March, my cousins showed us more of Julian Smith's stuff. Since then, I have been addicted to it. I have his app on my iPhone, and really want his "Got Malk" shirt. Check him out at http://www.juliansmith.tv/.

"Auburn" Apple Pie
I guess with being gone so much, I am really in the mood for cooking. This past weekend, I downloaded a Food Network app on my iPhone, and used a Bobby Flay apple pie recipe.

- 3/4 cup fine sugar
- 2 Tbs all-purpose flour
- 1 tsp cinnamon
*He does give directions to make the crust from scratch, but for me it's easier and cheaper to go with Pillsbury.

Peel, core, and slice apples. Mix apples slices with sugar, flour, and cinnamon. Place apple mixture in pie shell. Place second pie crust on top and form to the edges of the pie plate. Cut slits in the top crust to allow for steam to release in oven. Bake for approximately 30 to 40 minutes, until pie is fully baked and apples are tender.

My Absents....
Lately, my life has been "go, go, go". And finally it seems to be slowing down... for now. Because of that, I have been unable to sit down at my computer, and blog. It's not because I haven't had anything on the mind to blog... I've had plenty!
This is a sum up of what has been going on in my absents;
- March 15th - my little baby, Snuggs, truned 11. Wow!
- March 18th - We made a weekend trip to Jacksonville.
- March 21st - After being home for an hour from Jax, I left for Atlanta. And did not return till the following Saturday.
- While I was in Atlanta, my phone decided to quite on me. I was very thankful that I was able to leave it plugged in, and it would stay on. The following week I got my iPhone! Loving it!
- April 2nd, saw Sucker Punch with my aunt and sis. Don't see it.
- But also, I've got two words that would sum up half the month.... March Madness!!! It was pretty exciting that VCU and Richmond made it to the Sweet Sixteen, but then VCU made it to the Final Four!!!! How exciting!!!! Very bummed they lost, but was still very thrilled they made it to the Final Four for the first time in school history!
This is a sum up of what has been going on in my absents;

03/18/2011 - You know when you are in the backwoods when there is only one pump at a gas station, and you have to pay inside. (This was the detor during our trip to Jacksonville.... They led us into nowhere and our tank was on empty. Thank goodness for gas stations like this one!)
